Vamos girando el cazo a medida que veamos que el az\u00facar se disuelve y toma color poco a poco. Cuando todo el az\u00facar est\u00e9 disuelto y el caramelo tenga un tono ligeramente dorado, echamos las gotas de zumo de lim\u00f3n, meneamos y apartamos del fuego. <\/li><li class=\"direction-step\">Caramelizamos el recipiente o flanera repartiendo el caramelo por toda la superficie. Much\u00edsimo cuidado con el caramelo ya que alcanza temperaturas alt\u00edsimas y quema mucho.<\/li><li class=\"direction-step\">Para el flan mezclamos los huevos y las yemas con el az\u00facar con la leche. Cuando el caramelo se haya solidificado vertemos la crema colada en nuestra flanera y cubrimos con la tapa o papel de plata.<\/li><li class=\"direction-step\">Introducimos en una cazuela alta y amplia, y con cuidado, ayud\u00e1ndonos de un embudo por ejemplo, echamos agua tibia en el fondo de la cazuela hasta que cubra m\u00e1s o menos la mitad de la flanera. Colocamos la tapa de la cazuela y ponemos a fuego medio bajo vigilando que el agua no llegue a hervir. Cocemos el flan durante unos 45 minutos y comprobamos el punto de cocci\u00f3n del flan: los bordes deben estar tiesos y el centro menearse ligeramente.<\/li><li class=\"direction-step\">Apagamos el fuego, retiramos la flanera de la cazuela y dejamos que se enfr\u00ede a temperatura ambiente antes de refrigerar.
