Sazona con una pizca de sal y pimienta. Coloca la mezcla en un taz\u00f3n peque\u00f1o y deja enfriar.<\/li><li class=\"direction-step\">Afloja la piel de las\u00a0<strong>pechugas de pollo<\/strong>\u00a0sin separarlas por completo. Coloca una cucharadita de la mezcla de chalota y ajo cocido debajo de la piel de cada pechuga y exti\u00e9ndela sobre la carne. Arriba de la mezcla acomoda una\u00a0<strong>loncha doblada de jam\u00f3n<\/strong>\u00a0y 3\u00a0<strong>hojas de albahaca<\/strong>. Estira la piel del pollo sobre los rellenos y sazona ligeramente con sal y pimienta.<\/li><li class=\"direction-step\">Acomoda el pollo en una asadera mediana con la piel hacia arriba. Asa durante 5 minutos. G\u00edralo y asa durante 5 minutos m\u00e1s, luego gira de nuevo y asa durante unos 5 minutos m\u00e1s, o hasta que est\u00e9 bien crujiente en la parte superior; ten cuidado de no quemar la piel.<\/li><li class=\"direction-step\">Baja la temperatura del horno y hornea el pollo durante unos 20 minutos, o hasta que los jugos salgan claros cuando pinchas la carne. Transfiere el pollo a un plato y mantenlo caliente.<\/li><li class=\"direction-step\">Vierte los jugos de la bandeja para asar en un taz\u00f3n peque\u00f1o; retira la grasa con una cuchara y reserva el jugo marr\u00f3n. Coloca la bandeja de asar a fuego moderado.<br \/>A\u00f1ade el resto del chalote picado y el ajo, y revuelve hasta que queden tiernos y dorados, unos 2 minutos.<br \/>Vierte el vino y lleva a ebullici\u00f3n. Cuando el vino se haya evaporado casi completamente, incorpora el\u00a0<strong>caldo de pollo<\/strong>\u00a0y la\u00a0<strong>crema de leche<\/strong>.<\/li><li class=\"direction-step\">Lleva a ebullici\u00f3n y cocina a fuego lento, revolviendo ocasionalmente, hasta que se reduzca a 1\/2 taza, unos 4 minutos. Agrega el jugo marr\u00f3n reservado y la\u00a0<strong>albahaca picada<\/strong>, y sazona con sal y pimienta.<br \/>Sirve las\u00a0pechugas de pollo rellenas a la italiana con jam\u00f3n y albahaca\u00a0con la salsa sobre o alrededor del pollo.
