Su elaboraci\u00f3n es muy sencilla, ya que solo deberemos colocar las claras junto con el az\u00facar en el cuenco de la batidora y batir a velocidad media. Cuando empiece a espumar agregamos la vainilla en pasta y seguimos batiendo hasta que se formen picos duros. Reservamos.<\/li><li class=\"direction-step\"> Mientras se montan las claras vamos a elaborar el caramelo. Para ello, en un cazo colocamos el agua y el az\u00facar. Mezclamos bien y dejamos a fuego medio sin remover hasta que el caramelo se haya formado. Poco a poco el az\u00facar se ir\u00e1 derritiendo y cogiendo un color tostado. Sabremos que est\u00e1 listo cuando no queden grumos y tenga ese tono tostado. Es importante ir vigilando el caramelo y no poner el fuego muy alto, ya que si se quema tendr\u00e1 un sabor amargo muy desagradable.<\/li><li class=\"direction-step\"> Engrasamos el molde escogido con spray antiadherente y vertemos el caramelo en el fondo del molde con cuidado a no quemarnos, ya que el molde coger\u00e1 una temperatura elevada.<br \/>Con la ayuda de una cuchara o esp\u00e1tula, rellenamos el molde con las claras montadas. Deberemos hacerlo poco a poco para evitar que nos queden grandes burbujas de aire en el interior del flan.<br \/>Damos unos golpes al molde sobre la encimera para que salga el aire que haya podido quedar y alisamos la superficie.<\/li><li class=\"direction-step\"> Colocamos el molde dentro de un recipiente un poco m\u00e1s grande con dos dedos de agua para realizar el ba\u00f1o mar\u00eda.<br \/>Hornearemos en el horno precalentado a 180 \u00baC con calor arriba y abajo durante 20 minutos.
