papel de cocina o un pa\u00f1o limpio que no suelte hilos. Formar un paquete -o dos, si usamos dos bloques separados- y colocar en un plato con una bandeja encima.\u00a0Poner algo con peso\u00a0y dejar al menos media hora.<\/li><li class=\"direction-step\">Desenvolver el tofu y\u00a0cortar en cubos del tama\u00f1o de un bocado. Poner en un recipiente, a\u00f1adir un poco de pimienta reci\u00e9n molida y agregar el piment\u00f3n ahumado y el picante. Echar tambi\u00e9n el tomate, el vinagre de manzana y la salsa de soja, y mezclar con suavidad para que se impregne bien.<br \/>Calentar un poco de aceite de oliva en una sart\u00e9n o plancha antiadherente y saltear el tofu\u00a0hasta que se dore bien\u00a0por todos los lados, unos 10-15 minutos. Retirar y reservar.<\/li><li class=\"direction-step\">Picar muy fina la cebolleta o triturarla\u00a0con un procesador de alimentos. Engrasar si hiciera falta de nuevo la misma sart\u00e9n y pochar la cebolleta con una pizca de sal. Tambi\u00e9n podemos a\u00f1adir un poco de agua si no queremos usar m\u00e1s aceite. Dejar que se cocine a fuego suave hasta que est\u00e9 transparente.<\/li><li class=\"direction-step\">Pelar y trocear el mango. Picar muy bien o, mejor,\u00a0triturar con batidora o procesador de alimentos. A\u00f1adir a la sart\u00e9n y salpimentar. Mezclar bien, a\u00f1adir ajo granulado al gusto y un poco de vinagre de manzana. Cocinar a fuego suave unos 5 minutos y echar la leche de coco u otra nata vegetal.<br \/>Si se espesara demasiado, diluir un poco de caldo o de agua. Reincorporar el tofu, mezclando bien, y cocinar el conjunto unos cinco minutos a fuego suave.
