Tiene que obtener 4 trozos de corteza de tama\u00f1o casi igual, por pomelo. Corte cada pieza de corteza en tiras de 1\/2 cm o 1\/4 de pulgada de ancho aproximadamente.<\/li><li class=\"direction-step\">Si tiene un poco de pulpa de fruta prendida de las cortezas porque ha\u00a0pelado al vivo\u00a0las frutas, no la quite, es mejor as\u00ed. Ponga estas tiras de corteza en una olla, cubra con agua fr\u00eda y deje reposar 12 horas cambiando el agua 1 o 2 veces. Al d\u00eda siguiente, cambie el agua por \u00faltima vez y d\u00e9jelas sumergidas durante unas 4 horas m\u00e1s.<\/li><li class=\"direction-step\">Al final de este tiempo, escurra las cortezas, p\u00e9selas, vuelva a ponerlas en la olla con su peso en az\u00facar y su peso en agua (si es posible filtrada o mineral, para evitar el agua clorada del grifo, porque su olor influye un poco en el sabor). Ponga a confitar lentamente a fuego suave, revolviendo de vez en cuando hasta que ya no quede m\u00e1s liquido.<\/li><li class=\"direction-step\">Reparta las cortezas en una hoja de\u00a0papel de hornear\u00a0colocada sobre una\u00a0bandeja de horno para reposter\u00ed\u00ada, sin que se toquen.<br \/>Deje secar una noche o m\u00e1s, hasta que se vuelvan un poco firmes (a su gusto).<br \/>Entonces h\u00e1galas rodar con un tenedor en un poco de az\u00facar cristalizado, para cubrirlas ligeramente.
